Chocolate and Graham Cracker S’mores

Cooking s’mores over a campfire is one of my favorite things about summer. While we don’t get to go camping much, we will frequently light up the fire pit in our backyard just to roast marshmallows and squish them between graham crackers and chocolate bars. I mean, how can you resist such a perfect summer dessert!

Now that summer is coming to an end, I knew I was going to miss this special treat and was wondering what I would say when my daughter asked to make s’mores in the winter. She became a s’mores addict and there really is no good replacement! She has already asked for s’mores one rainy night a few weeks ago and I was at a loss.

As you may have guessed, my big ‘no’ to the rainy night s’mores didn’t end well as anyone with a young kid who doesn’t get their way can imagine. Her little face looked crushed and it broke my heart. There has to be a way to have s’mores year round! Time to get out my creative culinary thinking cap and get to work!

Making S’mores in a Pan

When you start to think about it, s’mores are actually quite a simple dessert which is why they are so easy to make outside when camping. Marshmallows, chocolate and graham crackers is all it takes to make this classic indulgence. This shouldn’t be too hard to recreate inside, right?!

I first tried to microwave the marshmallows just to make them barely hot and pressed them against the chocolate and graham cracker. It was a total fail. Sure the basic flavors were there but it just wasn’t the same. You really need that perfect golden brown marshmallow crust to get that true s’mores taste.

Next, I considered roasting the marshmallow over my gas burner but the idea of the marshmallow dripping down onto the burner sounded like a total mess. I also did a little research and found that some people had tried this method and described a gassy taste on the marshmallow- no thanks!

Now, I can’t exactly light a fire inside my house (especially since we have no fireplace…), so what to do?? You know what I do have in my house? An oven! It was so obvious, I needed to make s’mores in the oven in a pan!

Then I thought, why not do it as a dip?! Chocolate and marshmallows would make a mouthwatering dessert dip and graham crackers would be the perfect way to scoop it up. It is all so simple!

How to Make S’mores Dip in the Oven

I chose to make my dip in a cast iron skillet. Dark chocolate goes into the bottom of the skillet and is topped with mini marshmallows. The skillet gets nice and hot while also preventing the chocolate from burning since it is so thick. Cast iron is also oven safe- you don’t want to put a pan with a plastic handle in the oven…it won’t end well!

Dark chocolate is a must to get a super rich and decadent flavor for the dip. Dark chocolate also has lots of proven health benefits so you can feel good about eating it! I also far prefer mini marshmallows as they get that nice brown outer layer faster in the oven. Large marshmallows will work fine as well but will not get very crispy quickly.

The key to the s’mores dip is the high, fast heat of the oven. Baked at 450 ̊F, this is much hotter than many recipes and for good reason! You don’t want burned chocolate (which could happen if baked in a lower heat oven for a longer amount of time) and you really want to get those marshmallows nicely toasted. Don’t be afraid of the high heat in this recipe, just pretend it’s the camp fire!

How to Add Graham Crackers to S’mores

The graham crackers are not cooked with the s’mores dip because when you are outside making s’mores by the fire, they aren’t cooked either. I loved the idea of the graham crackers being used to pick up the dip and it worked fantastically. You just have to watch out for people who may be tempted to double dip, it’s hard not to!

If you really want that sandwich effect of a classic s’mores, scoop some dip with a spoon onto the graham cracker and then place another one on top. Easy enough!

Making S’mores with Kids

Another huge plus of this recipe is that it was so easy for my young daughter to participate in making the s’mores. My daughter layered the chocolate in the pan and sprinkled the marshmallows on top too. She watched them cook while staring into the oven with the oven light on- it was adorable!

When we make s’mores over the campfire, it’s tough to let her get involved while also keeping her away from the hot, dangerous fire. There isn’t a marshmallow stick long enough to make me feel okay about her making her own s’mores. What if the stick catches fire? What if she tries to get closer to the flames? Could the scalding hot marshmallow drips on her tiny hands…, how can s’mores can be so dangerous and so amazing at the same time?!

Simple S’mores Recipe for Everyone

So my problem was solved! S’mores dip was a success. Bring on the cold winter weather, don’t worry about a rainy night, you can now make s’mores anytime you’d like right from the comfort of your kitchen. We might just have to make s’mores dip a holiday tradition just to keep that summer flavor going year round! I hope you enjoy this creation, I know my whole family did!

Description

If you love making S’mores around the campfire, with this great recipe, that tradition doesn’t have to end when the weather becomes cold. S’more’s dip will let you enjoy the chocolatey, marshmallowy goodness year round!

Ingredients

Scale

  • 1 Hershey’s Special Dark Chocolate Chips, 12 oz.
  • 1 bag miniature marshmallows, 10 oz.
  • 1 box graham crackers, for dipping
  • 8 inch iron skillet

Instructions

  1. Preheat the oven to 450.
  2. In a cast iron skillet, add the chocolate chips first, then bag of miniature marshmallows.
  3. Once the oven is up to temperature, add the skillet to the oven.
  4. Bake for 7-9 minutes, or until the marshmallows turn golden brown.
  5. Serve with graham crackers for scooping.

Notes

  • Preheat the pan and then add the chocolate and marshmallows. The chocolate will melt even faster and then you can just put the pan under a broiler for about 3 minutes to toast the marshmallows
  • Look for small, individual cast iron skillets so everyone can have their own dip pan (no need to watch for double dippers!)
  • Place the chocolate in the pan then add a layer of soft caramel candies. Top with the marshmallows and cook as directed for a caramel version of s’mores!
